
BAKED APPLE CINNAMON OATMEAL CUPS
By now I would guess that most of you are back in school-mode, whether for yourself, spouse, or kids. It sure doesn’t seem like fall is insight here with crazy humidity, hot temperatures and AC that doesn’t work. Oh, and our ice maker is broken too. I think these last weeks of summer are out to get me! I hope the new start to your school year is going smoothly and that you’re a little more comfortable in your home than I am in mine (at least we aren’t on the top level!).
A few weeks ago I posted this article on healthy breakfast ideas for you and your kids. The suggestions in that post are not time intensive but they are are meant to be eaten sitting at the table. Some mornings don’t allow for a sit down breakfast. I get that. No matter how hard you try it just might not happen. Today’s recipe is the perfect on-the-go breakfast option. I had never tried baked oatmeal so I was excited to give this recipe a try. I altered this recipe to make it a little healthier for you by adding less brown sugar and more fresh apples and cinnamon. If you love cinnamon and apples you should definitely try this one at home. Keep in mind that these are not muffins or cupcakes. The texture is dense like oatmeal, but it is delicious!
Baked Apple Cinnamon Oatmeal Cups
Preheat the oven to 350 degrees and prepare muffin pan with muffin liners.
Evenly mix all dry ingredients in a bowl.
Combine wet ingredients in a separate bowl and mix thoroughly. Add to dry ingredients and then fold in fresh apples.
Fill muffin liners evenly with oatmeal mixture. Bake for 18-22 minutes. Let cool prior to enjoying.
Try eating one or two for breakfast or as a healthy snack. You may want to add some Greek yogurt or a hard boiled egg to get a little extra protein to balance out the carbs. My toddler loved these. It was so nice to have a prepared healthy option for him. If you have a bigger family then try a double batch and stick some in the freezer. Frozen oatmeal cups will reheat nicely with about 45 seconds in the microwave.
BAKED APPLE CINNAMON OATMEAL CUPS
INGREDIENTS
- 2 cups old-fashioned or quick oats
- ¼ cup brown sugar
- 1½ tsp baking powder
- 1 tsp cinnamon
- ¼ tsp salt
- 1 egg
- 1 egg white
- ¾ cup skim or 1% milk
- ⅔ cup unsweetened applesauce
- ½ tsp vanilla
- ¾ cup peeled, diced apple
INSTRUCTIONS
- Preheat the oven to 350 degrees. Place 12 cupcake liners in your pan and lightly cover with non-stick spray.
- Combine oats, brown sugar, baking powder, cinnamon, and salt in a bowl. Mix thoroughly.
- In a separate bowl, mix eggs, milk, applesauce, and vanilla.
- Add wet ingredients to dry ingredients and mix evenly.
- Fold in apples.
- Evenly distribute mixture into the prepared baking cups (about ⅔ full). Bake uncovered for 18-22 minutes until lightly browned and an inserted toothpick comes out clean.
